Ingredients

Apple, Olive Oil and Spice Mug Cakes

  • 1 Granny Smith Apple, cored and halved
  • 60 grams brown sugar
  • 60 grams olive oil
  • 75 grams Almond milk
  • 100 grams plain flour
  • 3 teaspoons cornflour
  • 2 teaspoons mixed spice
  • 1 1/2 teaspoons baking powder
  • 45 grams coconut yoghurt

Icing

  • 3 tablespoons icing sugar
  • 1/2 tsp mixed spice
  • a little water

Recipe's preparation

  1. Add the apple, brown sugar, oil and milk to the mixing bowl, with the MC in the mixing bowl lid chop 3 seconds/speed 4, or until the apple is finely diced, scrape down the sides then cook 3 minutes/98C/Speed 1
  2. Add flour, cornflour, mixed spice, baking powder and yogurt and mix well: 5 seconds/speed 4.
    Divide into two large mugs and microwave at 600W for 3 minutes 30 seconds.

    Make a glaze with icing sugar, a little mixed spice and water to drizzle over the top.

Tip

Instead of making a glaze, you could sprinkle a little brown sugar over the top of each mug before microwaving.
