  • 140 g raw sugar
  • 250 g strawberries, washed & hulled
  • 230 g plain flour
  • 1 tsp bicarb soda
  • 1 pinch salt
  • 40 g desicatted coconut
  • 2 eggs
  • 85 g olive oil
  • 160 g buttermilk
  • 1 tsp vanilla essence

Recipe's preparation

    Preheat oven to 180 degrees.
  1. Mill sugar, 5 secs / spd 9, set aside

  2. Place strawberries in bowl, puree for 10 secs / spd 9, set aside

  3. Place flour, bicarb, salt, sugar & coconut in bowl.  Mix 4 secs / spd 4, set aside

  4. Place eggs, buttermilk, olive oil, & vanilla in bowl.  Mix 10 secs / spd 4.

  5. Reduce speed to 2, feed dry ingredients through lid until mixed well

  6. Pour strawberry puree through lid, increase to spd 4 until swirled through mixture

  7. Pour mixture into greased loaf tin, cook for 50-60 mins, until skewer comes out clean.

Tip

These are also delicious as individual cupcakes - it is a very heavy & moist bread.

    Delicious! I made with gluten free flour lactose free milk and used coconut oil.


    I had caster sugar so didn't mill the raw sugar and just kept adding to the bowl each step to the purée strawberries.


    It turned out beautifully! I dusted with icing sugar and they were gobbled up by the family in record time. Thanks for a delicious, simple recipe.

    First time I made this I followed all the steps. Made extra dishes, and I forgot to add back in the bowl of sugar.
    I've made it a few times now- but I omit all sugar. And after pureeing strawberries I leave them in the bowl and add all the other ingredients at same time. And use Ghee or butter instead of olive oil.
    It's so good sliced, grilled and slathered in butter for a quick breaky with a cuppa.

    This is amazing! I've made this twice now & both times it has come out perfectly and both times it has been devoured within an hour! It's so quick & easy to put together, the hard part is waiting for it to cook!

    I made this today after my kids and I spent the morning picking fresh strawberry's!  It made quite a large loaf however, mine had quite a strong olive oil flavour, not sure if it was due to the type of olive oil I used?! I would def make it again but add more strawberries and less olive oil (or perhaps with a different oil).

    I made this recipe and substituted the sugar for coconut sugar, used spelt flour and the oil for coconut oil. I also forgot to set aside the dry ingredients and it still turned out to be a delicious moist loaf. Kids love it!

    this is so delicious. I made a double batch and the kids love it. I have packed slices up in sandwich bags ready for school lunches. The only thing i did different was at step 3 i didnt bother setting it aside.
