Ingredients

Sugar-free Scorched Almond Fudge

  • 200 g dark chocolate (85% cocoa or more), I love Whittiker's 86% or 92%
  • 100 g sugar-free white chocolate, I use healtheries white chocolate drops or vitawerx white chocolate
  • 140 g Nut Butter, I use pics smooth peanut butter or cashew butter
  • 50 g coconut oil or butter
  • 80 g Maple Fibre Syrup, I use nothing naughty brand
  • 125 g roasted, unsalted almonds

Recipe's preparation

  1. Grease and line a slice tin with baking paper (I use a 20cm square or a large kmart glass container)
  2. Place dark and white chocolate into mixing bowl and grate 10 sec/speed 8
  3. Scrape down sides of the bowl with spatula
  4. Add coconut oil
  5. Melt grated chocolate and coconut oil for 3min/60°C/speed 2
  6. Add nut butter
  7. Add maple fibre syrup
  8. Mix 20 sec/speed 3
  9. Add roasted almonds and stir through with spatula
  10. Pour fudge into prepared tin, cover and refrigerate until set

Tip

This is the base fudge that I use for rocky road and coconut rough versions too. Simply swap out the almonds for 3/4-1 cup of whatever you like. Homemade marshmallow, pistachio nuts, shredded coconut, freeze-dried fruit are all delicious added to this fudge.

    Oh wow this is sensational! We added some sea salt flakes because we can. I serve this to my customers in the salon and find it the perfect pick me up on busy days. (We may have cheated and used 72% dark Ghana choc 😬)
