  • 1 level tsp vanilla extract
  • 230 grams ground almonds
  • 130 grams Coconut sugar
  • 80 grams dark chocolate chips

Recipe's preparation

  1. Preheat oven to 180°C
  2. Insert butterfly whisk
  3. Place egg whites and vanilla into mixing bowl and whip 4 min/speed 3.5
  4. Remove butterfly whisk. Add almonds and sugar and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3
  5. Scrape down sides of the bowl and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3
  6. Add chocolate chips and mix 10sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3
  7. The mixture will be like a thick paste. Using a teaspoon, form small balls and place on a lined baking tray leaving 2cm between each cookie. They won't spread much.
    Press down gently with a warm, wet fork.
  8. Bake for 10-12 minutes, or until golden. Allow to cool.
    Store in a cookie jar for up to one week.
