- 250 grams Butter, chilled and cubed
- 210 grams raw sugar
- 600 grams plain flour
- 1 teaspoon bicarb soda
- 150 grams full fat milk

1. Place flour and butter in the thermomix bowl. Mix for 15 seconds / speed 6 till the mixture resembles breadcrumbs. Set aside.
2. Pour sugar and milk in to the thermomix bowl. Heat for 8 minutes / 90oC / speed 1-2 till the mixture is boiling.
3. Add baking soda to the bowl. Blend 5 seconds / speed 4. Allow to cool for 10 minutes.
4. Return the butter-flour mixture to the bowl. Knead for 30 seconds. Scrape down the sides and push flour in to dough. Knead for a further 10 seconds.
5. Turn the pastry on to a non-stick mat. Knead in to a ball. Wrap in cling wrap and place in the fridge for at least 15 mins, but several hours is preferable as this makes the pastry easier to roll.
6. Remove pastry from fridge and roll on a lightly floured surface.
7. Bake in a moderate oven (170oC-180oC). Cooking time will vary depending on use. I bake for 20 minutes when making individual fruit mince pies.
Note: I use this pastry to make fruit mince pies at Christmas and it is sufficient to make 36 pies (with lids). This pastry could also be used for a single pie. Any unused pastry will keep in the fridge for a couple of months.
