Ingredients

Fillings - Purple sweet potato Paste

  • 300 g purple sweet potato, peeled and cut into piece
  • 500 g water
  • 70 g raw sugar
  • 30 g Butter

Flaky Skin - Water Dough

  • 70 g Baker's Flour
  • 90 g cake flour
  • 15 g icing sugar
  • 2 g salt
  • 50 g lard
  • 85 g cold water

Flaky Skin - Oil Dough

  • 150 g cake flour
  • 70 g lard

Recipe's preparation

    Fillings – Sweet Potato Paste
  1. 1. Place cut sweet potato into Varoma tray

    2. Add water into mixing bowl. Place Varoma on top. Steam 15-25 min / Varoma / speed 2

    3. Remove Varoma. Pour out water from mixing bowl.

    4. Add steamed sweet potato, sugar, and butter into mixing bowl. Mix 40 sec / speed 3

    (Repeat if you need it)

    5. Transfer to the container to cool down. Keep in the fridge.
  2. Flaky Skin – Water Dough
  3. 1. Place all ingredients into mixing bowl. Mix 30 sec / speed 0-4

    2. Knead 1 min 30 sec / kneading

    3. Transfer the dough in the bowl and cover with cling wrap. Rest for 10 - 15 min

    4. Divide water dough into 10 pieces. Rest for 15 min
  4. Flaky Skin – Oil Dough
  5. 1. Place all ingredients into mixing bowl. Mix 1 min / speed 0-4

    2. Transfer the dough in the bowl and cover with cling wrap. Rest for 10 min

    3. Divide water dough into 10 pieces. Rest for 15 min
  6. Assemble
  7. 1. Use water dough to wrap oil dough

    2. Flatten the dough. Use rolling pin to make longish. Curl up from sideway. Rest 10-15 min.

    3. Turn dough 90°. Use rolling pin to make longish. Curl up. Rest 10-15 min.

    4. Cut into half and Cut side face up, Coat with flour, roll to flat and round.

    5. Flip over and wrap up the filling.

    I am struggling to picture what this recipe is for and what to do. Any chance of a video?
    i am ok with the making of the paste and the two doughs.
    I am confused from the step 1 of Assemble. Use water dough to cover oil dough. What does this mean?
