Mini muffins
- 200 grams caster sugar
- 260 grams plain flour
- 2 teaspoons baking powder
- 3/4 teaspoons salt
- 2 large eggs
- 115 grams Butter
- 15 grams Vanilla Bean Paste
- 110 grams full cream milk
- 220 grams blueberries, Fresh or Frozen
- 2 tablespoons raw sugar, For a sprinkle before you bake

- Add Sugar (200g)
Mill 10 Secons/Speed 10
Leave in bowl - Add all ingredients:
butter (115g), Milk (110g), sugar (200g), egg (2) Flour (260g), Baking Powder (2 tsp), Salt (3/4 tsp), Vanilla Paste (15g), 1/4 tsp Almond extract
Combined 5 Sec/Speed 5
Scrape down sides of bowl - Add Bluberries (200g)
Combined 5 Sec/"Counter-clockwise operation" / Speed 4 - Grease your mini muffin moulds (silicone is best) and use a cookie scoop to fill up (easiest way!)
Sprinkle a bit of Raw Sugar on the top of each muffin before baking for
17 Minutes at 180 C or until slightly coloured on top
Preheat Oven to 180 C

You can use any fruit in these:
Try blueberries and raspberries for Australia Day!
These are quite sweet, so I'm sure you could cut the sugar back at least 50g. Coconut sugar, or sugar subsititutes would work well.

I halved the recipe as I only had 100 grass of fruit, they turned out awesome, took a little longer to cook as I used the muffin bar silicone tray.

These muffins were scrumptious. I have made 2 batches in the past 2 days. I did cut the sugar back to 140gms, still plenty sweet! But they are light, moist and fluffy and not gluggy and cakey like other muffins. Also super simple and quick to make. I turned these into 12 large muffins and baked for roughly 30 mins. Perfect 👌
