Ingredients

mixture

  • 85 grams raw almonds
  • 150 grams Dessicated or shredded coconut
  • 90g grams cranberries, dried, you can also use pitted cherries, craisins
  • 3 egg whites
  • 1 tsp Rosewater
  • 3 drops white vinegar
  • 1 pinch cream of tartar
  • 2 tbsp natural sweetner, maple syrup, coconut syrup, honey, stevia
  • 1 pinch salt

Recipe's preparation

    Dry ingredients
  1. Preheat oven to 160 degrees. Add almonds to mixing bowl. Mill 8 secs/ speed 7

     

  2. Add dessicated coconut aand cranberries to mixing bowl. Mix 7 secs/speed 4.

     

  3. Set aside dry mixture. Throroughly clean and dry mixing bowl

  4. Wet Mixture
  5. insert whisk

  6. Add egg white and pinch of salt to mixing bowl

  7. Whisk egg whites, approx 1.30 secs / speed 3 until soft peaks form

  8. Add rosewater, cream of tartar, vinegar and sweetner to mixture. whisk approx 1.30secs/speed 3 until thick and glossy.

  9. Add the dry almond, coconut and cranberries to the egg white mixture. combine 5 secs/speed 1.5

  10. Remove butterfly whisk, scrape down the sides and the bottom of the bowl. mix 5 secs/speed 1 until just combined. 

  11. Using a teaspoon scoop walnut sized balls onto Oven tray or baking tray lined with baking paper. Bake in 160d oven for approx 12-15 mins until golden and toasty. remove from oven and allo to cool. Enjoy!

Tip

Make sure Mixing bowl and whisk is free from any fat residue to ensure whipping of egg whites.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
