Ingredients

  • 300 grams wholemeal selfraising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate soda
  • 1 teaspoon ground cinnamon
  • 85 grams Coconut sugar
  • 2 ripe bananas
  • 75 grams coconut oil, melted
  • 145 grams Milk
  • 2 tablespoons honey
  • 2 eggs

Recipe's preparation

  1. 1. Preheat oven to 180 degress. Grease or line 20 muffin holes.

     

     

  2. 2. In a bowl combine flour, baking powder, bicarb soda, cinnamon and sugar. Set aside.

     

     

  3. 3. Place banana into Thermomix bowl and mash 3 sec/speed 4. Scrape down bowl.

     

     

  4. 4. Add to bowl with banana, coconut oil, milk, honey and eggs. Mix 5 sec/speed 4.

    Ensure it's well combined.

     

     

  5. 5. Add all dry flour mixture. Mix 5 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

    Scrape down bowl mix 3 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

    DO NOT OVERMIX

     

     

  6. 6. Spoon mixture into prepared pans. Bake for 15 minutes or inserted skewer comes out clean.

     

     

  7. 7. Cool in pans for 5 minutes then turn onto a wire rack to cool

Tip

I pre-make my own Wholemeal Self-Raising Flour and keep it in the pantry so it's ready to use. (I make up about 5 times the below)

1 cup wholemeal plain flour

1 1/4 teaspoons baking powder

1/3 teaspoon salt

    Super easy and my 10 month old loves them! I didnt use any sugar and subsituted honey for rice malt and they are still declicious. Thankyou.
