Ingredients

  • 570 grams pumpkin, 1cm cubes
  • 5 eggs
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 2 pinches Nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon Freshly ground black pepper
  • 3 tablespoons coconut oil, melted
  • 300 grams almond meal
  • 1 1/2 tablespoons baking powder
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds

Recipe's preparation

  1. 1. Preheat oven to 160 degrees. Grease 12 hole muffin tray with coconut oil

     

     

  2. 2. Grate pumpkin 10 seconds/speed 5

     

     

  3. 3. To the pumpkin add eggs, salt, garlic powder, onion powder, nutmeg, ginger, pepper and coconut oil. Mix 3 seconds/Counter-clockwise operation"Counter-clockwise operation" /speed 4

     

     

  4. 4. Add almond meal and baking powder. Mix 10 seconds/Counter-clockwise operation"Counter-clockwise operation" /speed 4. Scrape down sides mix 10 seconds/Counter-clockwise operation"Counter-clockwise operation" /speed 4 or until well combined

     

     

  5. 5. Spoon mixture into muffin tray and sprinkle with pumpkin and sunflower seeds. Bake for 20 - 30 minutes or until a skewer inserted comes out clean

     

     

  6. 6. Remove from oven and cool slightly before eating

     

     

  7. Muffins can be stored in an airtight container in the fridge for upto 4 days

    Made these muffins today. Delicious. Freaked out about the 1&1/2 tablespoons of baking powder but it worked.

    These were tasty but not a hit here. Would grate the pumpkin more as well as the almonds if I was to make them again.

    Easy to make,and yummo. It made 12 large cupcake muffins and 18 mini ones. Next time may add more nutmeg or another spice. But prefect how they are too.

    These were really nice. Wasnt sure how to remove from the muffin tray so a little was stuck from each muffin.

    These are absolutely yummy. I didn't have onion powder so finely diced an onion, sauted it in a tsp of oil which worked well. I also added some fried and diced bacon which tasted sensational. These were lovely and moist even the next night. Love them!
