Ingredients

Step 1

  • 225 g Butter, roughly diced
  • 480 g golden syrup
  • 250 g Milk
  • 180 g brown sugar

Step 2

  • 2 eggs
  • 240 g plain flour
  • 1 tsp baking powder
  • 1 tsp bicab soda
  • 1/2 tsp Nutmeg
  • 1 1/2 tbsp ground ginger
  • 1/2 tsp mixed spice
  • 1 tsp ground cinnamon

Recipe's preparation

    Step 1
  1. Preheat oven to 180°C. Grease and line 2 loaf tins (25 x 9 x 10 cm) leaving enough overhang for easy removal, set aside.
  2. Step 2
  3. Place butter, milk, golden syrup and brown sugar into the mixing bowl and heat 3 min/80°C/speed 4.
  4. Step 3
  5. Add eggs, plain flour, baking powder, bicarbonate of soda, nutmeg, ground ginger, mixed spice and cinnamon and mix 40 sec/speed 6. Transfer mixture into prepared loaf tin and bake for 60 - 70 minutes (180°C), or until a wooden skewer inserted into the centre of the loaf comes out clean.
  6. Step 4
  7. Remove from the oven and leave to cook in the tin for 30 minutes before turning out. Serve warm or cold.

Tip

Serve buttered (optional, but yummier) and with a cheese board its delicious with a creamy blue cheese
