  • 800 gram coconut cream, 2 cans coconut milk or cream with over 5% fat content
  • 10 grams Plant based Yoghurt Base
  • 2 grams probiotic starter powder

Recipe's preparation

  1. Put coconut cream and yoghurt base into TM bowl. Cook 85*C/9 minutes/speed 3.

  2. Rest until temperature is 45*C. (This takes usually about an hour. Set the bowl outside the machine, and after about an hour stick it back on and turn the machine on. The TM will tell you the temperature of the bowl)

  3. Add the yoghurt starter and probiotic powder and blend it 3 minutes/speed 2-3.

  4. Pour into thermos flask, put on the lid and leave to culture for 8 hours

  5. Pour the coconut yoghurt into clean jar/s and put into the fridge for at least 6 hours before eating. It will thicken further with chilling

Tip

To cool the mixture quickly, you could put into a sink of cold water for 5 - 10 minutes. Make sure you dry the prongs on the Thermomix bottom of the bowl before replacing back into the machine.

Make half and half - To lower the fat content but still get a great coconut yoghirt, use a can of cream and a can of milk

Frozen fruit or chia seeds can be added into individual jars once the yoghurt has cultured and before you put it into the fridge for the final 6 hours.

Katharine uses 'Plant Based Yoghurt Starter' from Culture Cupboard which can be purchased from organic shops.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
