Ingredients

Oat Free Oatlike Crumble

  • 100 grams saved coconut
  • 100 grams activated almonds, I like the skin on as it gives a bit of colour
  • 50 grams Butter, ghee or coconut oil
  • 20-50 grams honey
  • 1 teaspoon cinnamon, optional

Fruit of the Season

  • enough fruit to cover the base of your baking dish, I steamed some rhubarb lightly and added raw nectarine and a few Cape gooseberries

Recipe's preparation

    Oat like Crumble
  1. Shaved coconut is just a stlye of coconut you can buy. Also called coconut flakes. Using this rather than dessicated will mean your crumble has a rolled oat like texture. 

     

  2. In the bowl of your Thermomix blend the coconut and almonds for 3 secs./speed 5. Scrape down and repeat, but don't make it too fine. You want it to look like rolled oats, the coconut should be in small pieces and the almonds broken up but not like a flour.

     

  3. Add the rest of the ingredients and blend 5 secs./speed 5

     

  4. The Fruit
  5. Dice your fruit roughly, use what ever is in season. So in winter apples and/or pears with vanilla and a drizzle of honey.

     

     

    In summer use stone fruit and berries, like peaches and strawberries or rhubarb and raspberry.

     

    Use less honey for sweeter fruits and more for tart ones like berries and green apples.

     

     

    Sprinkle with cinnamon, nutmeg or a seasonal spice. Add brandy at Christmas time and use green apple and raspberries for a red and green festive look.

  6. Bake
  7. Pour over your crumble mix and press in slightly. You can dollop over a bit of extra butter if you like. 

     

  8. Bake at 170'C (or 160 fan forced) as you want a lower heat for your easily burnt nut crumble. Cook for 20-30 minutes, depening on the fruit used. The fruit should be soft and the crumble golden. 

     

  9. Second Crumble Method - Pastry like
  10. By blending the nuts more and using dessicated coconut you can get a completely different texture of crumble

     

  11. In the bowl of your Thermomix blend the coconut and almond for 10 secs./speed 10 

     

  12. Add the rest of the ingredinets and combine 5 secs./speed 5

     

  13. Use like the oatlike crumble. To make more of a pastry texture, add more butter (I double) and/or add and egg white when you combine the ingredients. 

     

Tip

I like the oat like texture of the first crumble method, but if I dont have shaved coconut then I take it further and make the shortcrust style. I doduble the butter when I am doing this, as it makes it hold together better.

 

Serve with coconut cream!
