- 220 g caster sugar
- 225 g soften butter
- 25 g custard powder
- 1/4 level tbsp salt
- 1 egg
- 2 heaped tablespoons Vanilla Bean Paste
- 485 g plain flour
- 1/4 level teaspoons baking powder

- Using the whisk attachment
Add 220g of Caster sugar
Add 225g of soften butter
Add 25g Custard Powder
1/4 teaspoon salt
Mix on speed 5 for 30 seconds
scrap down the side of the bowl
Mix on speed 5 for 30 seconds - keep the whisk attachment in
Add 1 egg
Add 2 tablespoons of vanilla bean paste
Mix on speed 5 for 30 seconds
scrap down the side of the bowl - Add 485g plain flour and
1/4 teaspoon baking powder
Mix on speed 5 for 30 seconds
scrap down the side of the bowl
place on a surface and kneed until combined roll into a ball, flattened and cover in cling wrap put in fridge or freezer for 15-20 minutes - Roll dough out On baking paper or floured surface and cut into shapes freeze until hard and then bake. this prevents it from spreading
Place in a preheated oven at 160° for 8 to 10 minutes or until about to turn golden in colour.

The uncooked dough can last in the freezer for up to 3 months covered in cling wrap and an airtight container
I always bake one cookie as a taste tester before I cook the whole batch. So I know it's perfect!

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
