Ingredients

Cupcakes

  • 225 g Self Raising Flour
  • 80 g Butter
  • 80 g caster sugar
  • 1 egg
  • 130-150 g Milk
  • 1 tsp Vanilla Ess/Extract

Icing

  • 150 g icing sugar
  • 75 g Butter, Softened
  • 10 g Milk
  • dash food colouring of choice
  • sugar sprinkles

Recipe's preparation

  1. Preheat heat oven to 180C. Set out 12 patty pans into muffin tin.

     

    Add flour and butter to bowl. Mix 15sec, speed 5.

     

    Add Sugar. Combine 3sec, speed 2.

     

    Add vanilla and egg. Replace lid without measuring cup, turn to speed 3. Slowly add the milk. The mixture should be thick. Scrape down sides of bowl and mix again for few more seconds if need be.

     

    Spoon mixture into prepared patty pans. Bake for 10-15mins. Allow to cool.

     

    Clean and dry bowl.

     

    Add Icing Sugar, Butter, Milk and food colouring into bowl. Mix 3mins, speed 3.

     

    Ice top of Cupcakes and decorate with Sugar Sprinkles.

    Absolutely delicious !
    cake was light and fluffy next time I might double the mixture as they will quite small I do like my cupcakes a bit bigger .
    we added 2 tablespoons of cocoa to the icing and halfed the butter it was spot on great recipe

    probably the lightest and fluffiest cupcakes I've made in the thermomix. I think adding the milk gradually was the key.

    I found the ingredients and steps were spot on.

    These aren't bad. I prefer making cupcakes etc in my kitchen aid. This was my first try in the thermomix and i definately don't prefer it.
