Ingredients

Zucchini Muffins

  • 50 g Parmesan cheese
  • 100 g Tasty cheese
  • 2 spring onions, chopped
  • 150 g zucchini, chopped
  • 150 g carrot, chopped
  • 4 eggs
  • 50 g cream
  • 1 tablespoon Sweet chilli sauce
  • 100 g Self Raising Flour

Recipe's preparation

  1. 1. Preheat oven to 180C. Grease muffin tray.

    2. Place cheeses into mixing bowl. Grate, 5 sec, speed 7. Scrape down sides.

    3. Add zucchini, carrot, spring onion to mixing bowl. Grate, 5 sec, speed 5. Scrape down sides. Grate for further 3 secs if desired.

    4. Add remaining ingredients. Mix, 10 sec, speed 3.

    5. Spoon into prepared trays, bake 15-20mins until golden brown.

Tip

Recipe makes 24 mini muffins. You could use bigger muffin trays, you will probably need to cook for longer.

Also delicious with chopped ham added in step 4.

    I really enjoyed these. Quick and simple lunch to make when your in a hurry. I don’t think partner was too keen on them but he’s not that interested in anything healthy. The sweet chill sauce added a nice bite I think

    Really tasty. I added 4 slices of eye bacon and used 150g of flour. Topped with grated cheese - will be making again for the breakfast rotation.

    In the oven now. I added 50g more flour as it was quite runny. I made 12 standard muffins and 18 mini muffins from 1 batch.

    Tasty and easy to make. Perfect for lunches. Came out of muffin tin feeling rather loose but once they had cooled down a bit more they firmed up. Added 4 shortcuts of bacon diced. Will add corn next time.

    OMG these went down a treat, they were so yummy. I added a bit of salt and pepper and 1/4 teaspoon of cayenne pepper for a little kick.
