  • 150 grams Butter/Margarine, softened
  • 150 grams caster sugar
  • 175 grams self-rasing flour
  • 3 eggs
  • 1 teaspoon vanilla extract
  • vanilla sugar, dusting

Recipe's preparation

    Vanilla Fairy Cakes
  1. Preheated oven,180°C for 18-20 minutes

    Line a 12-section muffin tray with paper cake cases. 

    Put all the cake ingredients  in a mixing bowl and whisk for 1-2 minutes Speed 4 until light and creamy. 

    Scrape down 

    Divide the mixture evenly among the cake cases.

    Bake in a preheated oven,180°C for 18-20 minutes until risen and just firm to the touch. Transfer to a wire rack to cool.

    Dust with vanilla sugar.

Tip

OPTIONAL VARIATIONS:

Blueberry or Cranberry: Add 75g dried cranberries or blueberries, chopped if large.

Chocolate: Substitute 15g cocoa powder for 15 g of the flour. 

Chocolate Chip: Add 50g milk, dark or white chocolate chips or a mix.

Coffee: Add 1 tablespoon espresso or strong coffee powder.

Ginger: Add 2 teaspoons ground ginger and use light brown sugar instead of caster sugar.

Lemon/Orange/Citrus: Add the finely grated rind of 1 lemon or 1 small orange, or combine the rinds of 1/2 lemon and 1/2 orange.

Mixed Fruit & Cinnamon: Add 75g mixed fruit 1 teaspoon of cinnamon or to taste (mix peel, raisins, sultanas, currents).

Mixed Fruit: Add 75g mixed fruit (mix peel, raisins, sultanas, currents).

Sultana: Add 75g sultanas.

Turkish Delight: 75g Turkish Delight cut into 1/2cm cubes.

Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.

We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml.

All herbs are fresh (unless specified) and cups are lightly packed.

All vegetables are medium size and peeled, unless specified.

 

All eggs are 55-60 g, unless specified.

    Lovely cupcakes and so easy to make. I made them with white choc chips for the school lunches. Unfortunately they were so good (especially hot) only 3 are left for the lunch boxes tomorrow! The recipe was perfect for 12 muffin size pan. They weren’t overflowing. I will double the recipe next time and make more or extra large sizes. Thanks for the recipe Smile

    Loved this recipe and variations. Although I did add about 50ml of milk and creamed butter and sugar first before adding the rest of ingredients. Very light and fluffy couldn't stop eating them.

    i tried to put the batter evenly into 12 cupcake paddys and i had alot left over and they have over flowed whikst cooking... id day it more suits 24 not 12...
