Gluten Free Double Chocolate Muffins

  • 130 g Coconut sugar
  • 330 g Blanched Almond Flour
  • 1 tsp Gluten Free Baking Powder
  • 30 g cacao powder
  • 130 g Butter
  • 50 g olive oil
  • 2 --- eggs
  • 200 g full cream milk
  • 1 tsp vanilla extract
  • 80 g chocolate chips

Recipe's preparation

    Gluten Free Double Chocolate Muffins
  1. Pre-heat oven to 190°C. Grease two muffin trays and set aside.
  2. Place sugar into mixing bowl and mill for 3 sec | speed 9.
  3. Add flour, baking powder and cocoa into mixing bowl and mix for 5 sec | speed 5. Set aside.
  4. Place butter into mixing bowl and heat for 2 min | 60°C | speed 2.
  5. Add oil, eggs, milk and vanilla and mix for 10 sec | speed 4.
  6. Add reserved flour mixture and mix for 10 sec | speed 4. Scrape down sides of bowl.
  7. Add chocolate and mix for 5 sec | Reverse | speed 3.
  8. Spoon mixture into prepared trays and bake for 20 - 25 minutes or until a skewer comes out clean.

This is a tweaked version of 'Gluten Free Double Chocolate Muffins' recipe by Karen Rawnsley who tweaked the recipe on page 135 of 'Devil of a Cookbook'.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
