Ingredients

Cake

  • 100 g Butter, (room temp)
  • 50 g Coconut butter
  • 250 g white chocolate, (broken into pieces)
  • 250 g almonds
  • 150 g Coconut sugar
  • 6 eggs
  • 1 tablespoon baking powder
  • 50 g desicated coconut
  • 20 g coconut essence
  • 30 g coconut liquer

Chocolate Ganache

  • 100 g dark chocolate, (broken into pieces)
  • 80 g Pouring Cream
  • Shredded coconut, (optional, for decoration)
  • bounty chocolate bars, (optional, for decoration)

Recipe's preparation

    Cake
  1. Prehat oven to 180c, prepare a springform cake tin and set aside

  2. Place white chocolate into mixing bowl and grate 10 sec/speed 9.  Transfer to a bowl and set aside.

  3. Place almonds and desicated into mixing bowl and chop 6 sec/speed 6.  Transfer into the bowl with chocolate and set aside.

  4. Place coconut sugar, butter, coconut butter, eggs, baking powder, coconut essence and liquer into mixing bowl and mix for 20 sec/speed 7.

  5. Add reserved chocolate, almond and coconut mixture and combine 30 sec/speed 6.

  6. Pour mixure into prepared tin and bake for 1 hour or until a wooden skewer inserted into the centre of the cake comes out clean.  Allow to cool for 30 mins in the tin, then transfer to a wire rack to cool completely.

  7. Ganache
  8. Place chocolate into mixing bowl and grate 10 sec/speed 8.  Scrape down sides of mixing bowl with spatula.

  9. Add pouring cream and melt for 2-3min/50c/speed3

  10. Place cooled cake onto serving plate, spread ganache over top of cake, allowing to run over the sides.  Garnish with shredded coconut and bounty chocolate bars.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
