Ingredients

BROWNIE

  • 170 g White Baking Chocolate
  • 170 g unsalted butter
  • 100 g light brown sugar
  • 2 eggs
  • 3/4 teaspoon vanilla extract
  • 350 g plain flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 60 g Dried Cranberries.

FROSTING

  • 160 g icing sugar
  • 500 g cream cheese
  • 1 tablespoon Grated Orange Peel
  • 170 g White Baking Chocolate
  • 60 g dried cranberries, Chopped

Recipe's preparation

    BROWNIE
  1. 1.  Pre-heat oven at 170 degrees

    2.   Place chocolate (including frosting chocolate 170g x 2) into TM bowl and grate for 5 - 10 seconds/speed 8.  Set aside

    3.   Add 170g of chocolate and butter into the TM bowl and melt for 2 – 3 minutes/speed 2 at 60 degrees.

    4.   Add brown sugar and mix for 20 seconds/speed 3 while adding eggs and vanilla through the lid.

    5.   Add flour, baking powder, salt and cinnamon and mix for 10 seconds/speed 2.  Scrape down sides.

    6.   Add cranberries and mix for 10 seconds/speed 2 Counter-clockwise operation"Counter-clockwise operation"  (batter will be thick).

    7.   Spread into a greased 13-in. x 9-in. baking dish.

    8.   Bake for 20 - 25 minutes or until a toothpick inserted near the center comes out clean (do not overbake).

    9.   Cool on a wire rack.

     

    FROSTING

    1.   Add 170g of grated chocolate into the TM bowl and melt for 2 – 3 minutes/speed 2 at 60 degrees. Set approximately half of the chocolate aside

    2.   Add icing sugar, cream cheese, grated orange peel (optional) to the remaining melting chocolate and mix for 15 seconds/speed 2.

    3.   Frost brownies.

    4.   Sprinkle with cranberries.

    5.    Drizzle with remaining melted white chocolate.

    6.    Cut into bars.

    7.    Store in the refrigerator. 

Tip

Ovens vary, so cook until a skewer or knife comes out clean

If using Orange Peel or milling own icing sugar, place in TM Bowl individually and mill for 20 seconds/speed 10.  Set Aside.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Extremely yummy! Very decadent and you don't need a lot to feel full, though the taste alone will have you wanting more!
