Ingredients

Paleo Tortillas

  • 2 eggs
  • 25 g arrowroot flour
  • 1 tsp Coconut Flour
  • pinch salt
  • 1/4 tsp vanilla extract, (Optional if making sweet Tortillas)

Optional

  • 1 tsp coconut oil
  • 1 tsp water

Recipe's preparation

    Directions
    1. 1. Crack 2 eggs in your TMX bowl Closed lid"Closed lid" .
    2. 2, Add 1 tsp Coconut Oil (optional), Water (optional) and Vanilla Extract, if making sweet Tortillas. 
    3. 3. Mix speed 4 for 4 seconds.
    4. 4. Add dry ingredients - Arrowroot Flour, Coconut Flour, Salt and mix on speed 4 for 10 seconds (or until combined)
    5. 5. Heat a small (8") skillet pan over medium heat (makes 3 small tortillas) or a medium pan (makes 2  tortilla), pour in mixutre and swirl around to coat the bottom of the pan.  
    6. 6. Cook each side for approximately 1 minute.  Enjoy!   

     

Tip

You can easily double the batch to make more.

I make these without the coconut oil and water and they are delicious!!!  Great for school lunches and fold easily!

Arrowroot Flour can be substituted for Tapioca Flour

Mill your own coconut to make coconut flour.

Add your favourite fillings, I used spinach leaves, tomato, avacado and steamed chicken (from the Varoma).  You could try yogurt and berries for a sweet tortilla.  The choices are endless.

    Easy and delicious. I made a double batch, threw all of the ingredients in the TM bowl in one go and mixed for 15 seconds. Done!

    Mixture on the sandwich press Mixture on the sandwich press
    Hi,

    I use the Breville Sandwich Press (with the flat surface). I put about 1/4 cup of mixture in the middle and close it on the 'Toast' setting. It flattens to just about cover the surface. I then take it out once it no longer shrinks back when I open it. Let it cook on a rack and it will be nice and soft. If left too long it goes hard like a wafer.

    How do you use the Breville maker?  Is it a sandwhich press? Mine tasted good but mostly stuck to the pan so another way to cook them would be great.

    Best paleo wrap I have found. I usually make 4 times the recipe.  I didn't have any luck cooking them in a fry pan but put them in my breville maker and they come up a treat. The soft ones are great as wraps. The ones I cook too long the kids love as a crunchy snack. Thanks for the recipe. Sometimes I interchange the coconut flour for leftover nut pulp (from making nut milk) and it still works a treat.

    I'm super impressed by these little wraps. They are so simple yet so tasty. At first I thought they smelt too eggs but once eating I couldn't taste egg at all. Thank you!
