Ingredients
White chocolate, raspberry and macadamia blondies
- 160 grams raw sugar
- 75 grams macadamia nuts
- 200 grams white chocolate broken in pieces
- 130 grams Butter
- 2 eggs
- 75 grams Self Raising Flour
- 110 grams plain flour
- 100 grams white chocolate extra, chopped
- 150 grams frozen raspberries
- 1 tablespoon icing sugar

Preheat oven to 180 degrees c. Grease and line a 23 cm square cake tin
Place sugar in bowl and mill for 3-4 seconds on speed 9. Set aside
Place macadamia nuts in bowl and chop for 2 seconds on speed 5. Set aside
Place chocolate in bowl and grate for 5 seconds on speed 8
Add butter and melt for 2 minutes 60 degrees speed 2
Add eggs, flour and reserved sugar and mix for 5 seconds on speed 5.
Add the extra chocolate, raspberries and macadamia nuts and mix speed 3.5, reverse for 5 seconds. If not quite incorporated then mix in with spatula
Spread mixture into prepared tin and bake for 40 mins or until firm. Cover with foil half way through cooking to prevent overbrowning
Remove from oven and cool in the tin
Cut into nine squares and then cut each square in half diagonally to form 18 triangles
Dust blondies with icing sugar

These are lovely, made them without macadamia nuts (didn't have any) and a little less of the white choc (ran out) but it turned out very good. Would make them again with nuts this time. Thanks for a lovely recipe
Miss 13 makes these for school treats. She's tried it with & without the nuts (younger sibs at a nut free school). Perfect either way. they don't last long..she has to pack extra to share with class mates!
Loved it. Made it for work and it disappeared before anything else with very happy people. Substituted macadamia's for cashews but still worked perfectly. Great recipe!!!!
