Ingredients

Lamb and Silver Beet Rogan Josh

  • 2 teaspoons coriander seeds
  • 2 teaspoons cumin seeds
  • 4 cardamom pods
  • 6 whole cloves
  • 250 grams natural yogurt (can be made in the thermomix)
  • 900 grams lean lamb 3 cm cubed
  • 1 onion, halved
  • 2 cloves garlic
  • 1 2.5 cm piece of root ginger peeled
  • 30 grams olive oil
  • 1/2 teaspoon chilli powder
  • 1 teaspoon turmeric
  • 2 dried bay leaves
  • 1 4 cm cinnamon stick
  • 1 400g tin chopped tomatoes
  • 1/2 bunch silver beet, white stems removed, washed, dried and finely shredded (about 220 – 270g after it has been shredded)
  • 2 teaspoons garam masala
  • salt and pepper to taste

Recipe's preparation

    Lamb and Silver Beet Rogan Josh
  1. Place coriander seeds, cumin seeds, cardamom pods and cloves in bowl and roast for 2 mins, Varoma temperature speed 1

    Mill for 2 minutes speed 9

    Add yogurt and mix 5 seconds on speed 3 to combine

    Add lamb and mix for 10 seconds on reverse speed 3.

    Place into a bowl and cover and refrigerate and leave to marinade for at least 2 hours but ideally overnight

    Place onion, garlic and ginger in bowl and chop for 3 seconds on speed 7

    Add oil and cook for 3 minutes, varoma temp, reverse on speed soft

    Add chili powder, turmeric, cinnamon stick and bay leaves and cook for 1 minute, Varoma temperature, reverse, speed soft

    Add lamb and marinade and tinned tomatoes and 100 ml of water (for a thicker result you can leave this out) and season to taste and cook for 45 minutes, 100 degrees, reverse, speed 1

    Add silver beet, pushing it down into the curry with your spatula. (If it seems that it is not all going to fit, then add half and cook it for a minute to allow it to wilt down and then add the other half)

    Cook for 13 minutes, 100 degrees, reverse, speed soft

    Add garam masala and cook for a further 2 minutes, 100 degrees, reverse, speed soft

    Serve with basmati rice

    Nice recipe. Definitely try to marinate the lamb overnight as suggested. Didn't add the 100ml of water and still very runny so added about 3 tb of cornflour mixed with some water toward the end. Also left the measuring cup off for last 30min to evaporate some of the liquid. Once it was made, very very yummy and even nicer the next day. Thanks!
