Ingredients
Thai Chicken and Quinoa Patties
- 60 grams quinoa
- 500 grams chicken breast
- 1 egg white
- 1 tablespoon fish sauce
- 2 teaspoons finely grated lime zest
- 1/3 cup coriander, plus extra to serve
- 100 grams natural yoghurt
- 2 tablespoons lime juice
- 1 tablespoon Sweet chilli sauce
- 1/4 Wombok (Chinese cabbage) finely shredded
- 1 cucumber cut into ribbons
- 1 red capsicum, coarsely chopped
- lime wedges to serve

Place Quinoa in simmering basket and thoroughly rinse
Add 900 g water to the bowl and steam for 15 minutes, Varoma, speed 3
Refresh in cold water and set aside
Dry bowl and mince chicken in two batches by placing in closed lid position and turbo 3-4 times. Set aside
Add coriander and garlic and chop 2 – 3 seconds speed 6
Add quinoa, chicken, egg white, fish sauce and lime zest
Mix 20 seconds, reverse, speed 3 with the aid of the spatula.
Using damp hands divide and shape the mixture into eight patties
Meanwhile make the salad and dressing
Place yoghurt, lime juice and sweet chilli sauce into a bowl and mix together
Combine salad ingredients and place on a serving platter
Cook patties on preheated hot plate of barbecue for 3 minutes each side or until cooked through.
Place patties on top of salad and drizzle with yoghurt sauce. Top with extra coriander

If you want you can put the wombok and capsicum in chunks in the Thermomix and chop for 2-3 seconds on speed 4

These patties were so delish - I added a bit of ginger and spring onion too. I wasn't a massive fan of the dressing so threw that out and instead mixed some olive oil, sesame oil, ginger, fish sauce, lime juice and sweet chilli and dressed the salad with that. Was sooooo yum!
