Recipe's preparation

    Living Valley Quiona Crackers
  1. For this recipe you need 250 grams of cooked / cooled quinoa.
    Use your preferred method to cook quinoa.
    I personally used the Cooked Quinoa/Rice Cooker method on Cookidoo (UK Recipe). The Cookidoo recipe makes enough for two batches of cookies (or you can use for another recipe).
  2. Preheat oven to 170 degrees, fan forced. Line 2 large baking trays (30 x 40cm) with baking paper and set aside.
  3. Add 60 grams pecorino or parmesan cheese and 150 grams of almonds into the Thermomix bowl and blitz for 10 seconds on speed 10.
  4. Add 40 grams white sesame seeds, 2 eggs and salt to taste into Thermomix bowl
  5. Mix ingredients for 10 seconds on speed 4 reverse
  6. Using your fingertips, press generous teaspoon-sized of mixture into thin rounds (2-3mm thickness). Place onto prepared baking trays and bake for 15-20 minutes. If you like the biscuits extra crunchy flip them quickly and pop them back in the oven so the base is evenly cooked. To spice things up you can add chilli flakes to taste or some cayenne pepper. Serve with your favouite dips and cheese. This recipe can be halved as it makes a LOT of crackers. Crackers are best eaten on the day. Store in a sealable storage container.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
