Aunty Maree's Best Banana Cake Ever
- 130 grams almonds
- 120 grams brown sugar
- 120 grams Butter, (roomtemperature)
- 2 eggs
- 3 ripe bananas
- 150 grams self-raising flour
- 1 level teaspoon bicarbonate of soda
- 1 level teaspoon cinnamon, Ceylon
- 110 grams golden syrup
- 1 level teaspoon vanilla extract

- Add 130 grams of raw almonds into mixing bowl and mill speed 8 / 10 seconds. Set aside in a separate bowl.
- Add 120 grams of brown sugar and 120 grams of soft butter. Cream on speed 5 / 20 seconds.
- Add 2 eggs. Mix on speed 4 / 15 seconds. Check that mixture is thoroughly combined. Use spatula to remove any mixture from around the blades and repeat mixing on speed 4 / 15 seconds.
- Add 3 ripe bananas and mix on speed 4 / 10 seconds.
- Add 150 grams self-raising flour, one teaspoon of bicarb, one teaspoon cinnamon, 110 grams golden syrup, 1 teaspoon vanilla extract and reserved almond meal.
Mix on speed 4 / 20 seconds. Scrape down sides and mix again on speed 4 for 20 seconds. - Transfer cake into lined baking tin and cook at 160 degrees for 45-50 minutes or until a wooden skewer inserted into the centre of the cake comes out clean. Set aside to cool for 5 minutes then transfer onto a wire rack to cool completly. Don't be tempted to eat it all in one serve. Enjoy!
Tip
Making Golden Syrup in the Thermomix is super easy but allow an extra 45 minutes. You will find recipes on cookidoo or on the Recipe Community! You could also add some sneaky chocolate chips at step 5 if so desired.
