Pizza Bases

  • 250 grams Luke Warm Water
  • 1 tsp dried instant yeast
  • 1 tsp Monkfruit sweetener
  • 40 grams extra virgin olive oil
  • 130 grams tapioca flour
  • 175 grams buckwheat flour
  • 60 grams quinoa flour
  • 60 grams millet flour
  • 1 tsp sea salt

Recipe's preparation

  1. Lightly grease a large bowl or Thermoserver® with oil and set aside.
  2. Place water, yeast and monkfruit in mixing bowl, mix for 20 seconds/speed 2.
  3. Add oil, tapioca, buckwheat, quinoa, millet and salt. Knead on DoughModeDough mode"Dough mode" /2 minutes.
  4. Transfer dough to prepared bowl and work into a ball.
  5. Cover and let rest for 30-40 minutes. Use as required.

Tip

You can divide the dough into 8 portions and roll it out for mini pizzas - perfect for lunchboxes.

Roll out the dough between two pieces of baking paper, remove the top layer of paper and transfer base (with paper) onto an oven tray. Spread base with sauce and add toppings.

Rolled out pizza bases can be frozen for up to one month with baking paper in between and sealed in a freezer safe bag or an airtight container.

For best results preheat oven to 220°C, using a preheated pizza stone will help create a crispy base.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
