Ingredients
VEGETABLE MUFFINS
- 300 g pumpkin, chopped into 3cm cubes
- 130 g zucchini, roughly chopped
- 80 g onion
- 3 eggs
- 60 g extra virgin olive oil
- 1 heaped tablespoons Vegetable stock paste
- 60 g coconut milk
- 130 g tapioca flour
- 60 g Coconut Flour
- 20 g nutritional yeast
- 2 teaspoons baking powder
- 1 teaspoons curry powder
- 1 teaspoons sea salt
- 1/4 teaspoons ground black pepper

- Preheat oven to 180°C and grease or line a 12 hole muffin tray, set aside.
- Place pumpkin, zucchini and onion in mixing bowl and chop for 5 seconds/speed 5. Transfer to a bowl and set aside.
- Place eggs, oil, stock paste and coconut milk in mixing bowl and blend for 8 seconds/speed 3.
- Add all dry ingredients, mix for 10 seconds/speed 5. Scrape down the sides of the bowl with spatula.
- Add chopped vegetables, mix for 20 seconds/speed 3.
- Divide mixture evenly between muffin holes and bake for 25 minutes or until a skewer comes out clean when inserted into centre of a muffin.
- Allow to cool for 5 mins then transfer muffins to a wire rack to cool further.
- Serve muffins warm with sour cream, relish and a side salad.
Tip
For a chunkier version, cut pumpkin into 1 cm cubes, set aside and fold through with the spatula at the end.
