Muesli Bars
- 30 g pumpkin seeds
- 40 g sunflower seeds
- 70 g dates
- 30 g Apricots or Cranberries
- 220 g dark chocolate
- 125 g Butter
- 80 g Coconut sugar
- 40 g honey
- 140 g rolled oats, quick
- 40 g Crispy puffed quinoa
- 30 g sesame seeds
- 10 g poppy seeds
- 20 g Shredded coconut
- 1 tablespoon Grapeseed Oil

- 1. Preheat oven to 170 degrees
2. Add pumpkin seeds, sunflowers seeds, dates, apricots and 70g dark chocolate to bowl, chop 10secs/sp 6.
3. Pour into separate bowl, clean and dry mixing bowl. Place butter, coconut sugar & honey in bowl, melt 4mins/90 degrees/sp 1
4. Add remaining ingredients, including seed mixture. Mix 40sec/sp 4
5. Place into prepared tin/moulds and bake approx 16 - 18mins until golden (may be less depending how hot your oven is)
6. Leave to cool in tin, remove and place on baking tray.
7. To a clean dry bowl, add remaing dark chocolate and oil, melt 3mins/90 degrees /sp 1.
8. Pour over bars. Chill until set.
