Ingredients

  • 120g almonds
  • 90g rolled oats
  • 80g desiccated coconut
  • 60g coconut sugar
  • 1 tsp cinnamon
  • 40g coconut oil
  • 2 tbsp apple syrup, I use Chantal Organic brand
  • 1/2 tsp bicarb soda
  • 1 tbsp boiling water

Recipe's preparation

  1.  

    Preheat oven to 150˚C.

     

    Mill almonds 5 sec/speed 7.

     

    Add rolled oats, coconut, coconut sugar and cinnamon. Mix 3 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3. Set aside.

     

    Put coconut oil and apple syrup (you can use maple syrup if you don't have apple syrup) in the mixing bowl and melt 2.5 min/60˚C/speed 2.

     

    Meanwhile, boil some water for a cup of tea. In a small bowl or cup combine 1 tbsp of boiling water with 1/2 tsp bicarb soda. Add to the mixing bowl and watch it froth up. Mix 5 sec/speed 3.

     

    Add dry ingredients to mixing bowl and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4. Scrape down sides and add 2 tbsp water if you think it needs more moisture to come together. Mix again 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

     

    Line a baking tray. With wet hands, shape mixture into balls (about 15, depending on how much mixture you "taste"). Gently flatten each ball with two fingers and bake 20-25 minutes.

     

    Leave to cool on the tray for 5 minutes, then transfer to a wire rack until completely cool. Store in an airtight container or freeze for later.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
