Ingredients

Chicken

  • 2 chicken breasts, (approx 230g)
  • 500 grams water

Soup

  • 1 tablespoon TM chicken stock concentrate
  • 1 bunch silverbeet, stems removed and roughly chopped
  • 1 can Cannellini Beans, drained and rinsed
  • 50 grams Pesto
  • salt and pepper to taste

Recipe's preparation

    Shredded chicken
  1. Place whole chicken breasts in Varoma dish. Put 500 grams water in mixing bowl and cook 25 min/Varoma/speed 3. 

    Check chicken is cooked. Put aside hot cooking water. Put chicken in mixing bowl, season and shred 3 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

  2. Soup
  3. Place shredded chicken, chicken stock concentrate, silverbeet and beans into mixing bowl. Set scales to zero, add reserved steaming water and then make up liquid quantity to a total of 500 grams with additional cold water.

    Cook 7 min/100˚C/Counter-clockwise operation"Counter-clockwise operation" /speed 1.

    Add pesto and cook 2 min/80˚C/Counter-clockwise operation"Counter-clockwise operation" /speed 1.

    Adjust seasoning to taste and drizzle with olive oil to serve.

Tip

You can use any persto, but I used the Kale Pesto recipe by arwen.thermomix on Recipe Community.

Serves two for a hearty and filling lunch, or 3-4 as a starter.
