Ingredients

  • 125 g fresh breadcrumbs185
  • 185 g plain flour
  • 125 g brown sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp mixed spice
  • 0.25 tsp Nutmeg
  • 0.25 tsp cinnamon

Grate

  • 1 Large green apple, skin on
  • 1 Medium Carrot, peeled
  • 1 lemon rind, peeled in strips

Mince

  • 250 g rasins
  • 250 g currants
  • 185 g sultanas
  • 60 g mixed peel

Mix

  • 125 g Butter, softened
  • 3 eggs
  • Juice of a lemon
  • 0.25 tsp almond essence
  • 1 heaped tbsp golden syrup
  • Milk, if necessary to make mixture just drop off spoon

Recipe's preparation

  1. This recipe has been handed down through generations of my family. It is a perfect recipe to convert to Thermomix as the secret to its success is chopping the dried fruit very finely, which results in a dark, moist pudding.

     

  2. Weigh each of the dry ingredients into the mixing bowl and mix 10 sec/speed 5. Set aside.

     

  3. Place lemon zest into mixing bowl and grate 10 sec/speed 7. Scrape down sides of bowl. Add apple and carrot and chop 3 sec/speed 5. Set aside.

     

  4. Place raisins and currants into mixing bowl. Chop 15 secs/speed 7. Set aside. Place sultanas and mixed peel into mixing bowl and chop 10 secs/speed 7. Set aside.

     

  5. Place eggs, lemon juice, almond essence and golden syrup into mixing bowl and mix 5 secs/speed 6.

     

  6. Add all ingredients back into the mixing bowl and combine Counter-clockwise operation"Counter-clockwise operation" /20 secs/speed 6. The mixture should just drop off the spatula. Add a dash of milk if too dry and mix for a few more seconds.

     

  7. Grease one large or two medium pudding bowls and line with a circle of baking paper to just cover the bottom. (Check your pudding bowl will fit in the Varoma first.) Spoon in mixture and level top. Cover with baking paper over top of the pudding bowl and then with a sheet of foil, pressing around the lip of the bowl so water does not drip into the pudding. Secure with string.

     

  8. Place 1500g water into mixing bowl, put Varoma into position. Steam pudding for 3 hours/Varoma/speed 1. Top up water levels halfway through.

     

  9. On Christmas morning steam for a further 2 hours until piping hot. Serve with Thermomix custard and whipped cream.
