- 90 grams Butter
- 280 grams Self Raising Flour
- 70 grams rolled oats
- 50 grams white sugar
- 50 grams honey
- 200 grams Milk
- 1 egg
- 100 grams fresh or frozen blueberries

Chop butter and melt for 2 mins, 80 degrees speed 2.
Add all remaining ingredients except blueberries. Mix 2 minutes speed 3. Scrape down and mix for a further 30 seconds.
Add Blueberries, mix 30 seconds, reverse, speed 3.
Pour mixture into muffin tin, bake 180 degress for 15-20 minutes till golden on top.
Cool on rack and enjoy

Delish!! I used rapadura sugar and rice malt syrup instead of honey and coconut milk instead of milk due to diet restrictions and tasted perfect! Great recipe! Will be my go to recipe for berry muffins!!

Made these using mixed berries and they were a huge hit with my 4 year old who isn't usually a muffin eater
These turned out amazing. I added 1/4cup of flaxseed with the blueberries for something different and it was delicious.
I made these, and also a batch with apple added as well. I cut out the sugar in the second batch (with apple) and they were almost as sweet. Very nice!
