Ingredients

Zanzibar Spice Cake

  • 170 grams Butter, Cubed, room temperature
  • 70 grams caster sugar
  • 100 grams brown sugar
  • 3 eggs
  • 170 grams flour, self-raising
  • 2 level teaspoons baking powder
  • 1/4 level teaspoons ground cardamom
  • 1/2 level teaspoons ground cloves
  • 1 level teaspoons ground cinnamon
  • 1 vanilla pod, split and seeds scraped from inside pod
  • 3 level tbsp full cream milk

Recipe's preparation

    Preheat oven to 180c, and line a loaf tin with baking paper
  1. Place butter, brown and caster sugar into the mixing bowl and mix 30 sec/speed 5. Scrape down sides of bowl with spatula then mix 30 sec/speed 5. Scrape down sides of bowl with spatula.
  2. Crack eggs into a small bowl and at speed 4, slowly adding eggs through hole in mixing bowl lid for approximatley 25 seconds until fully incoroporated. Scrape down sides of bowl with spatula.
  3. Add sifted SR flour and baking powder, mix 20 secs/speed 5. The mixture should be soft, but fairly thick at this stage. Add combined spices and vanilla seeds to the batter along with the milk, mix 20secs/speed 3. Until the spices are distributed and the milk incorporated.
  4. Pour batter into prepared tin and bake for 40 minutes or until the cake has begun to come away from the sides of the tin. Cool slightly on a wire rack and serve with ice-cream for dessert or when cool dust with icing sugar.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
