Base

  • 150 g plain flour
  • 10 g cocoa powder
  • 50 g dessicated coconut
  • 100 g Brown Sugar
  • 125 g butter, melted

Filling:

  • 395 g condensed milk
  • 395 g caramel condensed milk
  • 50 g Butter
  • 44 gram golden syrup

Topping:

  • 250 g 70% dark chocolate, chopped
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon sea salt

Recipe's preparation

    Method
  1. Preheat the Oven: Preheat your oven to 160°C (fan bake).
  2. Line a 21 cm x 26 cm slice tin, with baking paper
  3. Prepare the Base:
  4. Place plain flour, cocoa powder, desiccated coconut, and brown sugar into the Thermomix bowl.
  5. Mix for 10 seconds on speed 4.
  6. Add melted butter and mix for 10 seconds on speed 4.
  7. Scrape down the sides and mix for an additional 5 seconds if needed.
  8. Press the mixture into the lined tin using the back of a spoon.
  9. Bake for 20 minutes.
  10. Prepare the Filling:
  11. After the base has cooled for 15 minutes, add sweetened condensed milk, caramel condensed milk, butter, and golden syrup to the Thermomix bowl.
  12. Mix for 30 seconds on speed 5 until smooth.
  13. Pour the filling over the baked base and return to the oven for another 15-20 minutes until golden and set.
  14. Chill:
  15. Allow to cool at room temperature, then refrigerate until cold.
  16. Prepare the Topping:
  17. Place the chocolate and vegetable oil in the Thermomix bowl.
  18. Melt for 3 minutes at 50°C on speed 2. Scrape down and melt for an additional 1-2 minutes if needed until smooth.
  19. Pour the melted chocolate over the set caramel layer and quickly smooth with the back of a spoon.
  20. Sprinkle with sea salt after 2 minutes.
  21. Serve: Once set, cut into pieces
