  • 40 g coconut oil
  • 2 eggs
  • 2 tablespoon chia gel
  • 500 g Milk

Recipe's preparation

    Pancakes
  1. Mill linseeds and oats 30-40 secs / speed 9, until fine.

     

  2. add all other ingredients and mix 45 seconds / speed 5, until combined.

    scrape down bowl half way if necessary

Tip

to make chia gel add 1/4 chia seeds to 3/4 water, stir and leave in fridge to thicken into gel.

1 tablespoon of chia gel can replace 1 egg.

These taste great fried in a little coconut oil and the mix makes quite a lot. We use this over 2-3 days, just add a little milk if it thickens too much in the fridge and give it a good mix/shake and leave to warm a little before using from fridge as the coconut oil can harden. You can add a tablespoon of baking powder or use SR flour if you would like them fluffy or to use as pikelets. Leftovers are also nice filled with meat and salad as a lunch wrap.

    I really enjoyed these crepes, I used them for lunchtime savoury wraps. Made a heap of crepes so freezed remaining crepes in between baking paper. Ended up using leftover chia gel in other recipes Smile

    I wasn't sure what to expect with these, but i really enjoyed them and i didn't too bad at making for first time. I was cheeky and added a couple sppons of sugar but overall they were really quite nice tmrc_emoticons.)

    So glad you like them! I use 2 eggs and 2 tbs of chia gel. You can just use 4 eggs if you dont have any chia gel and you could replace half (or all) of the linseeds with dry Chia seeds (mill them with the oats).


    For a gluten free option I replace the oats with Quinoa flakes and use GF flour.


    If they are too strong or nutty flavoured for kids add 20-30g maple syrup or honey or a tablespoon of vanilla extract to sweeten them.
