Ingredients

Soup

  • 5 g ginger, peeled
  • 100 g dessicated coconut
  • 30 g grapeseed oil (any flavourless oil)
  • 450 g pumpkin, peeled and roughly chopped
  • 1 apple, peeled & quartered
  • 500 g water
  • 1 tbsp Veg Stock Concentrate
  • salt, pepper & coriander to taste

Recipe's preparation

    Coconut butter / paste
  1. Chop ginger 5 sec / speed 8

  2. Add coconut and oil and blend 4 min / 37 deg / sp 8

    scrape and repeat until a paste is formed.

    add up to 40g water if needed. Should be thick and smooth.

  3. Add pumpkin, apple, water and stock

    cook 20-25min / 100 deg / sp 1 until pumpkin & apple are soft & cooked through.

    puree by turning slowly to speed 9 then leave on speed 9 for 1 minute.

    Unfortunately like some others I couldn't get that paste great.. It was tedious and not worth the effort. If I were to do it again is definitely use brought coconut milk/cream. The flavour wasn't really what I was after, so for me it wasn't a keeper. I'm sorry for negative feedback.

    An absolutely delicious soup. I cooked the paste on sp 4 and for double the time. I also added more pumpkin which I blitzed a little before cooking and as I didn't have an apple I used a pear. I added a teaspoon of curry. Love it and will definitely make again as a change to the usual pumpkin soup. Thanks for sharing. I'm not sure why it's low fat as coconut is quite fattening.  tmrc_emoticons.)

    I made this again and had a lot of trouble with the coconut paste at high speeds as it just stuck to the sides. The blades just couldn't reach the mixture as it was all stuck on the sides.  I wonder if it would be easier to blitz the coconut first without the oil to make it finer? The cooking process could just continue after this without trying to grind the mixture further.

    A lovely taste!  I had a bit of trouble with step one but I didn't worry about it.  Slightly grainy at the end but tasted wonderful, even with apple left out as I didn't have any.  Thanks.

    just a tip for the coconut paste/butter - depending on the brand/type of coconut it does take a little longer blitzing time. I now use organic shredded coconut and it works well. some coconut seems to be a little dry. You can use coconut oil for more of a coconut flavour or water or just keep blitzing the coconut until a smooth butter is made ( without oil or liquid added). remember the heat as it helps to soften it. Of course you can omit this step and just add a dash of coconut milk/cream I just like using the raw product. I think the trick to this soup (thanks goes to my nan) is really the sweetness from the apple. You can up the ginger (add it with the pumpkin) and add fresh coriander and/or dried cumin for a Thai flavour. Hope this helps. tmrc_emoticons.)

    I, like some other posters here, had trouble with the first step of getting the paste right and ended up with a grainy soup at the end. The flavour is amazing though and I will definately try this one again.

    Was not a fan of this recipe.  Didn't like the grainy bits of coconut at the end.  I also cooked it for longer on sp 4 to try and get a paste.  On sp 8 the coconut was all over the bowl and you had to keep stopping to scrape down the sides constantly.

    I will admit the flavour was lovely.  I didn't have enough pumpkin so put a sweet potato in.  Very thick and creamy. Will just use coconut milk next time.

    Super yum! The first step trying to get it into a paste is a bit tedious and never really works but I dont mind having slightly coarse bits in the soup from the coconut not mixing into a paste. Still really tasty! Have made it a few times now tmrc_emoticons.)

    This was delicious! I used shredded instead of desiccated coconut so think next time I would mill that a little first more, but yum yum yum! Tasted like it had cream in it and the prep time is very minimal. Thank you for sharing
