Ingredients

  • 120 g raw almonds
  • 375 g rolled oats
  • 1 tablespoon cinnamon
  • 35 g pepitas
  • 1 pinch salt
  • 50 g coconut oil
  • 1 1/2 teaspoon vanilla
  • 100 g honey
  • 65 g Shredded coconut
  • 40 g sultanas
  • 45 g dried apricots

Recipe's preparation

  1. Preheat Oven to 180C.

     

    Add Almonds to TMX bowl, Turbo 0.5secs x 2 or until desired consistency (I like mine a bit chunky). Add to large bowl with oats, cinnamon, pepitas and salt. Combine with spatula and set aside. 

     

    Add Coconut oil, vanilla and honey to TMX bowl. Mix 2mins/50deg/speed2 until melted. Pour liquid over the oat mixture and mix well with spatula. Spread mixture over a lined oven tray, place in oven and bake for 20 mins or until lightly golden, stirring mixture every 5-10 mins to prevent burning. 

     

    Remove from oven and sprinkle over coconut. Return to oven for 5mins. Remove from oven, add sultanas and apricots to hot tray, combine well and set aside to cool. 

     

    Once cool, store in an airtight jar or container. 

Tip

This recipe is refined sugar free.

 

I used organic, preservative free sultanas and apricots in this recipe.
