Ingredients

COCONUT Yoghurt

  • 3 can 270g Ayam Coconut Cream
  • 2 teaspoons agar agar powder
  • 150 g Coyo or other starter coconut yoghurt
  • 1 portion probiotic powder
  • 1 tablespoon Maple Syrup or other sweetener (Rapadura sugar)
  • 1 litre Jar

Recipe's preparation

    Make sure you bowl/blades/lid/MC is clean and dry
  1. Add Coconut Cream & Agar Agar to bowl and cook 100 deg, speed 3 for 5-10 minutes (Agar Agar need to reach 100deg to activate, you will get a much thicker yoghut by doind this)

     

    Allow the mix to cool to about 60 -70 deg then proceed to the yoghurt  Automated Recipe of the Thermomix 5

     

    Add remaining ingredients into bowl and set thermomix to Youghut in the Automated recipe and let it do it's thing! 

     

    After 8 hours when the TM5 has let you know its finished tip into a large clean jar, the yoghurt will still be rather runny but dont worry becuase once you put it into the fridge it will become thicker, if you like once it has set you can add it back to the thermomix bowl and whip it for 5 - 10 secs.

    Yes it’s creamy but to me it just tastes like I’m eating thick coconut cream. I usually like the taste of natural yoghurt because of the sour taste. Is there any way of getting this sour taste with the coconut yoghurt so that it tastes more like a natural yoghurt?

    Hi - I don't use maple syrup at all. I don't like the flavor of maple syrup in coconut yogurt (or the colour). The coconut sugar is my replacer. If it's for your daughter (and she's like my son - needs a bit more sweetness) you might add 2 tbs of coconut sugar. I use a variety of probiotics as long as they are over 60 bil CFU. I don't know where I read this or if it makes a big difference but I always have aimed for over 60bil. So if I need to use 2 pills, I do. Currently I have Dr Mercola probiotics with 70bil in one pill. Also, like others say, if it looks a bit thick and the gelatin (or agar agar) appears to be sitting on the top, I give it a quick blitz before starting the auto function. Yes, such a money saver to make your own. I only make occasionally now because I can eat a double batch in a few days. Wink

    I love this yogurt recipe! So simple and turns out perfect every time. For those struggling with agar agar, I use 2 tsp of Great Lakes Gelatin (red can). It's a huge can that ends up a fraction of the price of agar agar. Also a great egg replacer for other recipes. I use 1 tbs of coconut sugar and half organic coconut cream and half organic coconut milk. I still get the temp to 100, then with MC out, spin at 3 until back to 60 degrees. I always double this recipe and it works perfectly. Thank you for a fail proof yogurt recipe every single time.Smile

    Just made this for the first time overnight. To my suprise it had already become quite thick in the thermomix - had to blitz it before I took it out. I used plain dairy yogurt as my starter (as I don't have a problem with dairy am just trying to reduce my consumption) and sweetened with two tbsp of xylitol. I think its going to be yummy. Also a hint re agar agar powder - a small bag at my local healthfood shop was $21 - I nearly died! I decided I didn't need to make the yogurt after all, but then checked an asian grocery store - the sachet was about 1/4 the size but only cost $1.99. I'm not sure if agar agar is as prohibitive at other health food shops, but if it is, now you know where to try instead.

    yes im starting to think that heating the agar agar for 2 minutes AFTER it reaches 100degrees is the issue. Ill have to try it again by turning it off when its reached 100 degrees
