  • 1 clove garlic
  • 1 carrot, Rough chop
  • 2 zucchini meduim, chopped
  • 1 red chili
  • 1 Handful parsley
  • 4 tomatoes, Chopped in half
  • 1 bunch rosemary
  • 1 chicken breast, Chopped
  • 1 heaped tablespoon veg stock
  • 120 g Milk
  • 3 level tablespoon cornflour
  • 50 g coconut oil
  • 2-3 sheets puff pastry, ready-made

Recipe's preparation

  1. Place onion, chili & garlic into TM bowl 4 sec spd 7 add coconut oil

    100deg 2 mins, spd 1

    Add tomato, vegies & herbs, Closed lid"Closed lid" , turbo 3-4 times until desired size

    cook 100deg 5 mins speed 1, Counter-clockwise operation"Counter-clockwise operation"

    Add chopped chicken, TM veg stock, milk & flour, Counter-clockwise operation"Counter-clockwise operation" spd 3-4 to combine

    cook veroma temp, 20 mins, 2-3 spd

    (if it splatters out MC cover lid with basket)

    Line a pie dish with puff sheet leaving one to cover, once pie contents has cooked pour into prepared dish cover with puff and bake in oven 200deg for 20 mins until golden brown

    Lovely chicken pie. I used thighs instead of breast, asparagus instead of zucchini and olive oil instead of coconut oil because that's what I had at home. Filling was delicious.

    I've always cooled my pie contents before putting in to pastry. Can you confirm this is to be put in to the pastry hot please?

    Love  I replaced the Zuchinni for Kale added Capsicum, fresh basil and chives...And replaced the chicken for turkey mince as it was all i had and it was delish!!!

    I didn't really enjoy this one. More puréed that I thought it would be.  I imagined a nice slow cooker type chicken and veg mix. It was baby purée by the end of the 20 mins cooking time.

    This was a lovely pie, I didn't have coconut oil so instead used olive oil and added coconut essence at a later stage, I also used half a chilli as I was serving it to kids but it didn't have much kick at all so the full chilli probably would have been fine. I made the short crust pastry from the everyday cookbook as I had a bit of extra time. Will definitely make again, thanks!
