Seeds and dry ingredients
- 360 grams sunflower pepitas, organic if possible
- 300 grams Shredded coconut, organic if possible
- 120 grams crystalized or preserved ginger, organic and suplhur free if possible
- 50 grams poppy or pumpkin seeds, organic if possible
Soaked ingredients
- 100 grams pitted soaked dates

Add 2 dates at a time and mix on speed 5 for 10 seconds.
Mixture shoould be slightly wetter than dough. Scrape down sides and repeat if necessary.
Spread out on an Excalibur teflon sheet and score in straight lines to the desired size.
Dehydrate for 12 hours
Check after 12 hours and remove from the teflon sheet, turn over and seperate so that each peice has some space to dry completely.
Once dry these lsat in the fridge in an airtight container for 3 weeks. If they last that long. They are also suitable for freezing.
Place all dry ingredients in the bowl and mix on speed 5 for 10 seconds
Tip
When spreading on your teflon sheet use a wet long flat butter knife or long straight spatula.
You will need a dehydrator for this however if not you can use your oven on the lowest possible setting and leave the door slightly open. This will still take a couple of hours and will depend on how crunchy you like them. My boys love them quite dry and crunchy.
