- 1 package Instant dry yeast
- 2 teaspoons sugar
- 575 grams bread flour, plus extra for rolling
- 1 3/4 teaspoons salt
- 290-300 grams warm water, (43 degrees celsius)
- poppy seeds, optional
- sesame seeds, optional

Combine yeast, sugar, flour and salt in "Closed lid" and mix on Speed 4-5 for 3-5 seconds.
Reduce to speed 2 and slowly pour in water the mixing bowl lid until full incorporated (20 seconds).
"Dough mode" 2 minutes or until dough is soft and smooth.
Cover or wrap in thermomat and let rest in a warm place for 1 hour.
Flour work surface or thermomat and deflate the dough. Set dough on floured surface and let rest for another 10 minutes.
Divide dough into 8 pieces. Flatten each piece to get rid of air bubbles. Roll each into a ball. Press finger into centre of each dough ball to form a ring/desired shape.
Place bagels onto baking sheet lined with baking paper and cover with a tea towl to let rest for another 10 minutes.
Fill a large pot with water and bring to a boil. Once boiling turn temperature down to bring to a simmer.
Preheat oven to 220 degrees celsius.
Place 2 bagels at a time into simmering water and boil for 1 minute
Flip over and boil for another minute
Remove from from water and return to baking sheet.
Sprinkle with poppy or sesame seeds (optional).
Repeat with remaining bagels
Place baking sheet in the oven for 22 minutes or until golden

What is the mass of the dried yeast? It is difficult to make a guess as to how much to use when you have a bulk package of dried yeast.
