Ingredients
Caraway Rye Bread
- 230 g lukewarm water
- 2.25 level teaspoons dried instant yeast
- 14 g sugar
- 110 g rye flour
- 115 g Plain Greek Yoghurt
- 1 level tablespoons caraway seed
- 1.5 level teaspoons salt
- 280 g plain flour
- 25 g bread improver
- Butter, For rubbing on loaves

- Add lukewarm water, sugar, yeast and 110 gm rye flour to the bowl. 20 sec/ speed 4.
- Let sit in the bowl for 20 mins for the rye flour to absorb the water.
- "Blend" Add the remainder of the ingredients to the bowl. 20 sec/ speed 4.
- Dough"Dough mode" / 5 mins.
- "Warm Up" Turn out dough into an oiled bowl and let prove for 60-90 mins.
- Knock the dough down and shape into one big oval loaf or two smaller loafs. Place on baking paper lined tray.
Cover and let the loaves rise for 60-90 mins. - Preheat oven to 180. Spritz loaves with water before placing in the oven.
Bake smaller loaves for 35-40 mins. Large loaf for 45-50 mins. - Remove from oven and transfer to a wire rack. Before it cools, rub crust with butter so it stays soft.

Tip
Due to the rye flour, this is a sticky dough. Dont be tempted to add more flour. Dont let the dough over prove as it will fall flat. Proving time will depend on the temperature of your location.
