Ingredients

250g Farina/00/ super white Flour (can be substituted by Plain Flour but it will give more dense and Chewy result)

  • 200g Luke Warm Water
  • 1/2 teaspo dried yeast
  • 1/2 teaspo baking powder
  • 1 tablespo each sugar and oil
  • 1 teaspoon salt

Recipe's preparation

  1. Put all ingredients into the bowl, mix 20 secs/speed 4

    Rest 10 mins in the bowl for gluten to relax

    Spin 2 mins/reverse/speed 6. The dough expects to be wet.

    Dust flour into ThermoMat, divide into 2 portions, roll out half cm thickness into a rectangular shape. Use flour to prevent sticking

    Cover and proof until double in size

  2. the dough should rise up to approx 1cm thickness. Cut the dough into 2-3 cm width strips

  3. Make 2 equal size strips, dip a skew into water to create an indent line on the dough strip

  4. Stack a strip on top of the other, wet the skew and press down again

  5. Stretch the double layers strip out before deep fried

  6. The dough will puff up when fried, use chop stick to stretch out the spaces to ensure it cooks all surface.

    The purpose of the water indent line is to make the 2 doughs sticked together when cooked

    Turn over after a few seconds to brown the dough

This recipe is adapt from easy ciabatta bread method

Served with Asian Rice Congee/Poridge  or Vietnamese Noodle Soup

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
