Ingredients

  • 60 grams Coconut Flour
  • 2 tablespoons Psyllium husk
  • 40 grams coconut oil, (or melted butter)
  • 1/2 teaspoon salt, (Himalayan or sea salt)
  • 1 teaspoon baking powder
  • 250 grams Boiling water
  • Seasoning (optional), (salt/pepper/herbs/spices)

Recipe's preparation

  1. 1. Put all ingredients into bowl in order listed.

     

    2. Knead (Dough mode"Dough mode" ) for 3 minutes.

     

    3. Remove dough from bowl (it should be a sticky consistency) and place on a Thermomat or a sheet of baking paper.

     

    4. Divide into 4 equal portions in a ball shape.  Flatten with palm of hand and then roll each ball between Thermomat and 1 piece of baking paper (or between two sheets of baking paper if you don't have a Thermomat) until they form flat bread shapes about 1/2cm thick.

     

    5. Dry fry in a pan for a few minutes each side or until golden and the bread has started to rise slightly.

     

    6. Depending on the size of your pan, you might need to keep each warm in the oven while you cook the others.

    Though I liked the taste of these and will make them again, mine turned out quite lumpy which resulted in a bit of doughyness among the more dried out and browned areas.

    I tried this twice in the one day and couldn't get the bread to dry up enough - followed to the gram too!! Any hints as it sounds like such a great idea  tmrc_emoticons.)

    These were very easy to make and very easy to eat. I followed the recipe to the letter using coconut oil and hand hot water. I dry fried each 'ball' in a sandwich toaster which produced light, fluffy breads of an even thickness. Served with Lemon chicken curry instead of the usual rice. I will definitely make again - thank you for sharing!
