Ingredients
- 2 heaped teaspoons Earl Grey tea leaves
- 250 ml boiling water
- 500 g Laucke Sweet Bread & Bun Mix
- 4 g Yeast Sachet, included with Laucke bread mix
- 100 g Dried peaches
- 2 level teaspoons mixed spice
- 40 g Maple syrup
- 50 g sultanas
- 2 heaped tablespoons rolled oats

Place Earl Grey tea leaves into a small jug and pour over boiling water. Allow to infuse and cool to lukewarm.
In the meantime, place dried peaches into Thermomix bowl and chop for 5 seconds at speed 5. Remove and set aside.
Add Laucke Sweet Bun and Bread mix, dried yeast, mixed spice, maple syrup and lukewarm Earl Grey tea, including tea leaves, into Thermomix bowl and mix for 5 seconds at speed 8. Set dial to closed lid position"Closed lid" .Then knead"Dough mode" the dough for 2 minutes, adding the chopped dried peaches and sultanas in the last 30 seconds.
Transfer the dough onto a lightly floured ThermoMat, and shape to a round ball. Loosely wrap with ThermoMat and place in a warm spot until it rises to double its size (approximately 30 minutes).
Knead dough with hands to de-gas, then place into an oiled and floured deep loaf tin. Sprinkle rolled oats on top and press lightly into surface. Cover with a tea towel, and place again into a warm spot to "proof" for approximately 30 minutes or until double its size. Preheat the oven to 200C.
Bake fruit loaf in oven for 30 minutes or until golden brown. Remove from oven and allow to cool for 10 minutes, then transfer to a wire rack to cool. Slice and serve.
Tip
You can substitute the dried peaches for dried apricots or any other dried fruits you desire.

Great bread - thank you. I didn't have any Sweet bread and Bun mix, so used the Laucke Soy Linseed mix instead. Just increased the amount of tea I used and maple syrup, and increased the fruit. Needed to cook longer because of the loaf's size. Tastes great!
