Recipe's preparation

  1. Add water and butter to mixing bowl and heat 2mins/37°/speed 2.

     

  2. Add to your mixing bowl in this order yeast, flour, salt, sugar & bread improver. Blitz 10secs/speed 7 to combine.

     

  3. Dough mode"Dough mode" for 6 min watching to make sure you machine doesn't jump off your bench.

     

  4. While your dough is kneading, oil a mixing bowl and your loaf tin and set aside.

  5. Transfer your dough to a lightly floured bench and knead into a smooth ball.

     

     

  6. Place dough into an oiled bowl and cover or wrap in your thermomat and place your covered dough in a warm spot and prove for 1 hour or double in size.

  7. Knock down and roll into a log and place into your loaf tin. Cover and prove for another 30 minutes

  8. Once your bread has finished proving cook for 30 minutes 180° - 220° (depending on your oven).

     

  9. Once cooking is complete tip your loaf out onto a wire rack immediately and let cool.

Tip

I use a plastic mixing bowl covered with glad wrap when I prove my dough for the first hour. I place it on the top of my stove.

If your new to making bread, oven temperatures can vary quite a bit so start at 180 deg and when your cooking time is up tip your bread out onto a wire rack and tap the bottom of the loaf. If it sounds hollow it's cooked if not put your loaf back into your tin being careful as both the loaf and tin are very hot and keep cooking untill it sounds hollow. Each new batch increase the temperature on your oven by 10 deg until you find the best cooking temperature for your oven your can increas it up to 220 deg max.

The preparation time in mking the dough is 10 mins but if you count proving it's 1 hour 40 approximately so you may need to consider this if you plan on heading out.

I use a 700g loaf tin with a lid.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
