Ingredients

Paleo Nut and Seed Bread

  • 210 grams almonds, Raw or Activated
  • 35 grams linseed
  • 80 grams Peppita Seeds, Or seeds if choice (pumpkin, sunflower etc)
  • 10 grams chia seeds, Black, white or mixed
  • 20 grams Coconut Flour
  • 1 tsp bicarb soda
  • 6 eggs whole
  • 1 tbsp apple cider vinegar
  • 55 grams coconut oil
  • Sesame and Chia Seeds, For sprinkling on top

Recipe's preparation

    Paleo Nut and Seed Bread Batter
  1. Pre-heat oven to bake at 160 degrees.

     

    Line a 20cm x 10cm or 30cm x 10cm baking tin with baking paper or grease and line with baking paper.

     

    Place 150g of the Almonds into the mixing bowl, mill 8 Sec/Speed 8.

     

    Add the Linseeds, Peppita Seeds, Chia Seeds and the remaining 60grams of Almonds into the mixing bowl, chop 5 Sec/Speed 6.

     

    Add the Coconut Flour, Bi-carb Soda and mix for 4 Sec/Speed 3.

     

    Add Eggs, Apple Cider Vinegar and Coconut Oil, mix 10 Sec/Speed 4.

  3. Poor batter into prepared baking tin and generously sprinkle with sesame and chia seeds.

     

    Place in a pre-heated oven for 45-50 minutes or until slightly golden. A scewer should come out clean when inserted.

     

    Remove from your oven and leave for 5 minutes before transferring to a cooling rack.

Tip

Oven times may vary but recommended to keep cooking temp at 160 degrees or lower. 

Suitable for freezing and toasting. Lasts up to a week in the fridge.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
