Biga
- 1/2 level teaspoons dry yeast
- 210 grams warm water
- 220 grams bakers flour
Dough
- 1 level teaspoons dry yeast
- 170 grams warm water
- 1 level teaspoons sugar
- 120 g Biga
- 300 grams bakers flour
- 2 level teaspoons salt
- 1 level teaspoons bread improver
- 1 level teaspoons malt barley, found in beer section of Big W
- 1/4-1/2 level teaspoons citric acid, for sourness

- 1. Combine all of the ingredients in the "Closed lid" and blend s5 for 20 seconds.
2. Transfer to a bowl, cover and place in the fridge for 12-24 hours before using. - 1. Add all ingredients into the "Closed lid" the biga is to be first. Combine S7 for 10 seconds.
2."Dough mode" Knead for 5 minutes.
3. Transfer to mat or bowl, cover and leave to prove for 30/45 minutes.
4. Punch down and shape into a ball.
5. Place into a heavy lidded oven proof casserole, cover and leave to rise until double, about 30-45 minutes.
6. Prheas the over to 250C.
7.Sprinkle surface with flour and slash with a sharpe knife.
8.Cover with the lid and bake for 20 minutes, then remove the lid and bake for a further 5-7 minutes until brown.
9. Cool on a wire rack.

Tip
You will have Biga left over. You can seperate this up and place in freezer bags and freeze.
When using after you have freezed the biga please take out of the freezer at least 12 hours before you wish to use.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
