Ingredients
Starter
- 100 g bakers flour
- 100 g rye flour
- 6 g Yeast
- 140 g water
Dough
- 370 g White bread flour
- 370 g Rye Bread Flour
- 10 g salt
- 10 g dried instant yeast
- 453 g water

I'm cooking this todayRecipe's preparation
1.) Place a bowl on top of your bowl and select your scale
2.) Weight all your ingredients into the bowl and mix together
3.) Leave in a warm place overnight
Select Scales in the Mode selection and weight out the yeast & Water.
Then 37c speed 2 for 2 minutesNow weight out both flours into the bowl and the salt.
Select"Dough mode" for 5 mins.
Now if you have a Silcone mat place dough on the mat and cover for 1hr.
Meanwhile clean and dry bowl and also flour Bread baskets
Place a bowl on the bowl and select scales
Weight out 450g Loaves and roll into a round loaf.
Now gently place into the bread basket withthe bottom on top and spray with oil.
Now gently cover with cling film around the dough.
Now place in the fridge overnight.
Now pre heat the oven at 250c
Place the baking tray in the oven to heat up, also placing a baking tray with 1.5 of water in the bottom of the oven to create stream
Once the oven is hot remove tray and gently tip dough into tray
Spray with water and using a strive, cover with flour
Using a bread scalpel, cut the loaf to how you would like the marking to look
Now put bread into oven and spray while closing the door
cook for 5 mins, then spray again and turning oven temp to 230c
bake for another 10 minutes and then turn loaf
cook for another 5 minutes
remove from oven and allow to cool on a cooling rack

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
